Pumpkin Pie Cake

I found this recipe a while back on Pinterest which actually linked over to one of my favorite blogs for saving money :)
This was so so easy to do and was so good, make sure you give some to your neighbors.



1 (29oz) can pumpkin puree
1 (12oz) can evaporated milk
3 eggs
1 cup sugar
2 teaspoons ground cinnamon
1 teaspoon ground nutmeg
1/2 teaspoon ground ginger
1/2 teaspoon ground cloves
or
Use 3T pumpkin pie spice
1 package yellow cake mix
1 cup butter
1 cup chopped nuts
1bottle of whipping cream


1. preheat the oven to 350. line a 9x13 pan with parchment paper or foil. spray with cooking spray

2. In a large bowl, combine the pumpkin, evaporated milk, sugar, eggs, cinnamon, nutmeg, ginger, cloves ( or pumpkin pie spice). Mix until smooth and pour into your pan.

3. sprinkle the dry cake mix over the pumpkin mixture, then sprinkle chopped nuts and pat down gently. melt butter & drizzle over cake.

4. bake at 350 for 45-60 mins. check at 45 mins and go from there. let cake cool ( i stuck mine in the fridge for an hour.

5. after cake is cool, turn upside-down so the top is now the crust. stick back in the fridge until you serve it. spray on the whipping cream & enjoy!
